2022 White Heart

After a long hiatus the White Heart is back. Named in honor of the fact that most grapes have no tint in their juice but it resides within the skin or flesh. This concept originally manifested itself when another client was dropping fruit in the vineyard that wasn’t ripe enough and an opportunity and wine was born. The resulting fact is the reason it’s possible to make a sparkling wine made that has no color from red grapes such as Pinot or Grenache Noir. Pressed extremely soft and gentle this labor and time consuming process can only happen under the right circumstances. This is essentially a sparkling base fermented out to dryness. It is the lightest version of this wine ever made, as well as the lightest most malic driven white wine to date. Very crisp and light this is a wine made to keep you cool on those hot days but enough complexity and depth to keep you hot on those cool nights.
