Dark, rich clarity in appearance. Lilac, gingerbread, hickory, and black bramble fruit on the nose. Black plum pudding, and roasted strawberry in taste.
Fermented on skins for 21days utilizing an extended 10 day maceration after primary for a total of 31 days on the skins. Aged for 18 months in 50% new oak with the remaining aged in once filled or neutral barrels. 90 cases produced.
